St. Patricks day is usually a food holiday filled with green and minty flavors, but because we live our own lives it can also be a food holiday filled with gold and lucky charms (insert sunglass wearing emoji)! Today we’re making over a box of brownie mix with malted milk buttercream and lucky charms to give it a step up. This is perfect for a St. Patricks Day but also works for any other gathering where you might be serving robin’s eggs or malt balls. Enjoy!

Piece of Cake: Malted Lucky Charm Brownies | Oh Happy Day!

Malted Lucky Charm Brownies
Makes 16 fairly rich brownies

For the brownies:
1 box of your favorite brownie mix for an 8×8″ pan plus the ingredients to prepare them
1 cup of the actual cereal, not the lucky charm marshmallows

For the Malted Milk Buttercream:
1/2 cup butter
1 3/4 cup powdered sugar, sifted
1/4 cup malted milk powder
2 tablespoons heavy cream
1 teaspoon vanilla extract

1/2 cup lucky charm marshmallows

Prepare the brownies according to the box, mixing in the cup of the crispy cereal before adding to the baking dish and baking. After your brownies are baked, let them cool completely before moving onto the buttercream.

To make the buttercream, beat together the butter for 1 minute to lighten it up a little. Then sift in the powdered sugar and malted milk powder and beat on medium speed for 1 minute more. Add the heavy cream and vanilla then beat for one final minute until the buttercream is light and fluffy.

Spread the buttercream on the cooled brownie, top with the marshmallows and serve.

    This time of year always makes me so sad that I don’t live in America and don’t get to experience the wonderfulness that is Lucky Charms! I’m sure there’s a few select places that would stock them here in Australia, but every time I’ve purchased American brands they have been really expensive! I just want to eat marshmallows for breakfast like you guys! ?
