Wow, what a weekend. Charlotte was out to visit this week and she just barely left Saturday. So we played tourist guide again. This week we have two other groups of people shacking up with us. That is what you get when you live in a cool city.
Yesterday, I made this 3-Ingredient Fettuccine Alfredo from Martha. Paul liked it but it was a little too greasy for my taste.

Yes alfredo can be greasy – but this recipe I use may not be as bad – but probably much worse on the healthy scale. It is supposed to be Olive Garden’s recipe – who knows.
1 pint of Heavy Cream
1 stick of butter
2 T. Cream Cheese
3/4 C. Parmesan cheese
1 tsp. Garlic powder
In a saucepan melt butter. When butter is melted add cream cheese. When the cream cheese is softened add heavy cream. Simmer this for 15 – 20 minutes on low. You may wish to season with a little salt and pepper.

This one is good too. This recipe is from the chef @ Sub-Zero.
2 tablespoons unsalted butter
2 tablespoons olive oil
ΒΌ cup fresh minced garlic
3 cups heavy cream
Large pinch salt
Freshly ground black pepper
2 cups finely grated Parmesan cheese or Asiago cheese
Place butter and olive oil in 2-quart saucepan and heat until butter is melted. Add garlic and turn heat down to LOW. Cook, stirring constantly, until the garlic is cooked through, and tender, but not brown. Add cream, salt and pepper. Turn heat to MEDIUM and gently simmer mixture until cream is reduced by one-third. Whisk in cheese and season, if desired.
