Watermelon Salad Refresher

I’ve been taking cooking classes at Tante Marie’s. The classes are a little bit expensive but my friend had to back out of some of hers so she let me buy them at a reduced rate. In the class it is mostly really pretty young women with big diamonds in their ears, on their hands, and around their necks. A telltale sign that you are in the midst of trophy wives. Luckily trophy wives have pretty easy lives so they are really nice and it was fun to be in a class with them. There was also a rich gay dude and a straight dude that has a rich mom who is into cooking and wanted him to take the classes.

Anyway, they are really fun and we get to make all these sweet recipes and at the end of the night we eat a HUGE feast and I love it.

Here is an easy but yummy summer salad treat that I learned there:

-watermelon
-feta cheese
-fresh mint leaves
-extra virgin olive oil
-salt and pepper

Cut the chilled watermelon into wedges and put on a platter or big bowl. Sprinkle feta all over it (enough to make it taste good). Cut up the mint leaves and sprinkle it all over. Drizzle everything in olive oil and then throw some salt and pepper on it. It is so good you’ll die.

It is a really good recipe to go along with a barbeque. I made it for my friends and they were impressed. And isn’t that the point?

    Sounds yummy. Did you ever eat at Alice Waters’ restaurant in Berkeley? She was in my HS graduating class in Van Nuys.

    Alice Waters, is she the Chez Panisse mastermind? I’ve never eaten at her restaurant but I’m always up for a field trip.
