Pepper made this pumpkin soup last week and it was SO DELICIOUS. I found the recipe on her blog and made it yesterday with Paul’s mom. It is perfect for fall and so easy.
Pumpkin Soup
¼ c butter
1 small onion
1 clove garlic
2 tsp packed brown sugar
1 14 oz can chicken broth
½ c water
½ tsp salt
¼ tsp ground black pepper
1 15 oz can pure pumpkin (optional to add 1 cup cooked butternut squash)
1 12 oz can evaporated milk
1/8 tsp cinnamon
Chop onions (small), sauté with butter, crushed garlic clove, brown sugar, salt and pepper until onions are soft. Add broth and water, bring to a boil, turn down to med. heat and simmer for 15 minutes. Add milk, pumpkin and cinnamon. Cook on med heat 5 more minutes, stirring occasionally.
