Microwave Caramel Popcorn

A few years ago I discovered a life changing fact…you can make homemade caramel popcorn in a microwave! It’s usually a time-consuming process so this discovery was a total game changer. It only takes 15 minutes and all you need is a brown paper bag and a microwave. At the beginning of a new year, I like cutting extra clutter out of  my life and try to live with less. So I love that this recipe only requires a few simple ingredients and has fewer calories. We have a tradition of making this for our family movie nights.

We used Truvia Baking Blend in this recipe, which is a blend of cane sugar and Truvia Natural Sweetener. It has 75% less calories per serving than sugar, so this recipe is a healthier option for your family than traditional caramel popcorn. Now you can have a little bit more on your movie nights!

Microwave Caramel Popcorn | Oh Happy Day!

Microwave Caramel Popcorn

16 cups of popped popcorn
1/2 cup Truvia Baking Blend
1/2 cup Butter
2 tbsp. Truvia Simple Syrup (Truvia Natural Sweetener)
1/2 tsp. Salt
1 tsp. Vanilla Extract
1/2 tsp. Baking Soda

Step 1: Place the popped popcorn into a brown grocery bag. Set aside.
Step 2: Add the Truvia Baking Blend, butter, Truvia Simple Syrup, salt, and vanilla together in a bowl and place in the microwave for 2-3 minutes. Watch the window to see once the liquid starts boiling and the butter is melted, then remove.
Step 3: Whisk the caramel mixture together until combined. Place back in the microwave for one additional minute.Step 4: Whisk in the baking soda.
Step 5: Pour the caramel mixture over the popcorn in the bag. Fold the top of the bag down a few times, then shake vigorously (you want to make sure the caramel evenly coats the popcorn.)
Step 6: Put the whole bag into the microwave for 1 minute. Then, remove and shake again. Flip the bag over and put it into the microwave for an additional minute.
Step 7: Empty the warm popcorn onto sheets of parchment paper or wax paper to cool.
Step 8: Enjoy!

    I love my microwave popcorn recipe but almost never make it because of the sugar high (and sugar guilt) connected. Will be using this one for Super Bowl!

    We too LOVE to make popcorns for family movie nights and micro-wave changed all for us. It’s so easy and funny when your ear the unmissable “pop” in the oven.
