Schaum Torte

My mom used to make this dessert for us all the time. It is my all time favorite dessert ever. It is a good dessert because it is unique and you can make it beforehand and it is pretty easy. I made it last night and it was a success.

This is right after they came out of the oven.

This was right before we ate them. (Sorry the lighting is lame. I was trying to make it look cool but I don’t know what I’m doing.)

Here is the recipe:

Schaum Torte
1 C. cold egg whites
1 tsp. apple cider vinegar ( the usual brown kind)
1/2 tsp. cream of tartar
2 C. sugar

1 pint whipping cream
vanilla
1 T. powd. sugar

Beat first three ingredients in mixer until stiff peaks form. Gradually add sugar, keeping mixer on high speed. Spoon into two well buttered glass pie pans (I used 8 ceramic ramekins).

BAKE: 300 degrees, 10 min. then 250 degrees, 30 min. (I did 25 minutes because the ramekins were smaller)Leave in oven to cool, usually overnight.

To assemble, cut off top of meringue, trying to keep pieces together. Whip cream with sugar and vanilla, and spread over bottom of meringue. Piece together the top. Refrigerate. Serve with peaches or berries.

Notes:
-Almond extract in the whipped cream is yummy with peaches.
-You can serve it in the pie pan or take it out and place it on a fancy plate before you add the whipped cream.
-It’s possible to freeze the extra meringue. Cover it with two or three layers of plastic wrap. Allow to thaw at room temp., and then add whipped cream.

    um. my teeth almost melted these things were so good.

    this is one of those things that tastes good, and you made it really pretty too. yum!

    We first ate this dessert at Andelin’s Gable House. Mike Andelin told me the recipe was from Cecelia Ludwig and I could find it in the recipe book Kerry Henderson compliled.
