We were in Sacramento visiting Paul’s brother and family a few weeks ago. And Kara and Brandon made us the yummiest fish tacos ever. I finally made them a few nights ago and WE LOVE THEM! We’ve had them everynight since. It takes us about ten minutes and is so tasty. I suggest serving with fruit or something cool because it is spicy. Here is the recipe.
White Sauce recipe:
1/2 cup plain yogurt
1/2 mayo
1 lime, juiced
1/2 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp dried dill weed
1/2 to 1 tsp ground cayenne pepper (depending on how spicy you want it–I use 1/2 tsp)
In a med bowl, mix together yogurt and mayo. Gradually stir in fresh lime juice until consistency is slightly runny. Season with spices.
Popcorn shrimp or battered fish (cod) cut into small chunks
Pico de gallo salsa
Shredded cabbage
Lime slices
Corn tortillas
Lightly fry tortillas; not too crisp. To serve, place fish/shrimp in a tortilla, and top with white sauce, salsa, cabbage, and squeezed juice from lime slice. Enjoy!

I’ve been wanting a good fish taco recipe – I usually order them whenever I see them on a menu.

Nate and I had some good ones at a hole in the wall place here in SLC. I blogged about it here. http://toniaconger.blogspot.com/2006/09/utah-restaurant-of-note.html
You and Paul sound just like Nate and I. When we find something we like we eat it all the time until we get sick of it.
