Pumpkin Butterscotch Sauce by Billy Green
Hey Guys! It’s Billy from Wit & Vinegar with some exclusive content for my new book Whip It Up! Now, instead of choosing something from the book, we’re just going to build on that because maybe you’re greedy and 75 recipes isn’t enough.
In the book there’s a whole chapter for frozen treats, so we have sundae toppers, several ice creams, and a few popsicles. The cool thing with ice cream is that you can pretty much eat it on anything, wherever, etc. But sometimes you need something to go on the ice cream itself. Enter this sundae topper: PUMPKIN BUTTERSCOTCH SAUCE. We’re taking the already great butterscotch and upping it like six levels.
Everything is nice and balanced in here, there’s the flavor of pumpkin that’s pretty level with the richer butter flavor and just a hint of spice because we’re not trying to compete with pumpkin spice anything. The last bit of this that’s great, the cherry on top (v inception) is that everything gets stirred together and boiled for a few minutes. Hardly any effort is made. If sundaes aren’t you’re thing (go get checked) then you can totally try it on waffles, in coffee, or on a spoon straight out of a glass.
Pumpkin Butterscotch Sauce
Makes about 1 cup
4 tablespoons unsalted butter, cubed up
2 tablespoons heavy cream
⅓ cup pumpkin puree, not pumpkin pie filling
¼ teaspoon coarse kosher salt
¼ teaspoon pumpkin pie spice
1 tablespoon light corn syrup (this is to improve gloss and consistency, like hair conditioner. Feel free to not use it if you’re completely against it)
1 teaspoon vanilla extract, or bourbon 😉
Step 1: In a small saucepan melt down the butter. Once the butter’s melted add the rest of the ingredients, stir to combine and bring to a boil. Continue to boil for 3 minutes over medium heat.
Step 2: After the 3 minutes turn off the heat, stir in the vanilla or bourbon and add the sauce to a small container to cool. Keep stored in the refrigerator for up to one week. Reheat in 30 second intervals in the microwave when you’re ready to use.
**For the Sundae up there I went ahead and put some sauce in the bottom of a glass, added a scoop of vanilla ice cream, more sauce, another scoop of ice cream, more sauce then some softly whipped cream and chopped toasted pecans.

I have loved and followed him on instagram and his site for some time and I love his recipes. Two words Brownie Granola! This looks amazing!!!
