I’ve had several people email me for my fancy gourmet lemon cake recipe. Ok, here goes:
Step one: Buy a lemon cake mix.
Step two: Follow directions on the box, and voila! 😉
{I actually make it a tiny bit fancy by spreading fresh lemon curd in between the eight layers and then frost it with fresh cream cheese frosting.}

Seems almost too good to be true – but it looked lovely in the photo! I’m throwing a party for my husband tomorrow, and am still at a loss as to what I should make. Too many delicious options! The lemon cake sounds so nice and simple that I might just have to try that – thanks!

So refreshing….reading blog after blog of “well I got up at 4 to get my fresh chicken eggs from the coop and then walked down to my aisle of lemon trees to pick the freshest of lemons…” Sometimes cake mix is just GOOD!!!!!! {Don’t get me wrong…If I have a big property and not a little apt. maybe I could talk like that too!}

Lemon curd and cream cheese ANYTHING make life worth living. I’ll definitely have to take a stab at this sometime soon (although I may not be brave enough to do eight layers).

I have a few tricks from Alton Brown to fancy up a cake mix…it really makes it taste so much better so I just thought I’d mention it. All you do is:
Add (1) Extra Egg
use Butter instead of Oil
use Milk instead of Water (Reduce qty by about 20%)
Add a Tsp. of Vanilla
No one ever guesses I’ve used a cake mix when I’ve made it this way and it’s so yummy though not the healthiest option ;).

I love lemon cake. We had a lemon cake for our wedding last summer. I add fresh lemon juice to the mix as well. Lemon Curd rocks!

The boxed lemon cake with a box of lemon pudding added is great as well. I think I’ll make it for Easter lunch! Great idea!

Your lemon cake is lovely, and practical to boot. But it’s the cake stand that caught my eye. I collect them, and that is one pretty thing.
